Do people who speak Hebrew in Israel and elsewhere actually write out the full word for each number, like, achat, shtayim, shalosh, etc. or do they just use the hindu number system (0-10)? What about Gematria?

We use the same system as you, (1..2..3..). Achat, shtayim, shalosh is used in the same manner as one two three - you could write the name, but why not write the digit?

Gematria is usually reserved for Jewish related matters, like the Jewish calender, verses in the Bible or fortune telling calculations. Some fanatics might actually change their name if they think the value of their letters doesn't add up right (as did Eden Har'el, our Mtv VJ, who was born Adva Har'el).

Each number has a letter in the Hebrew Alphabet. So you can use that, or Latin Numbers. But not hindi numbers, nor Arabic Numbers, or persian numbers.
